There's tons of great things to do but it depends on your interests, the type of holiday you want--relaxing/active/sightseeing/history, the age of your kid(s), your budget, etc. If you provide a little more information, I can make some suggestions.

For example, the Mosel Valley in Germany is fantastic--gorgeous scenery and terrific bike trails if you are interested in cycling. You can tour some of the charming villages and do some wine tasting. There are reasonably priced accommodations and fancier places depending on what you are looking for. You could stay in Trier for some historical sightseeing or in a small town like Beilstein for a quieter experience.
